It’s lightly sweet, perfectly crunchy, and filled with wholesome ingredients that you likely already have in your pantry. And better yet, it’s made without protein powder—just simple, natural staples that come together to create something truly delicious and nourishing.
If you’ve ever flipped over a bag of store-bought granola, you’ve probably noticed just how much sugar is packed into even the “healthy” options. While it may taste great, it’s not always the best choice if you’re trying to be more mindful of what you’re eating. On the flip side, the granolas that are made with cleaner ingredients often come with a pretty hefty price tag. It can feel like you’re stuck choosing between convenience and quality. That’s exactly why I love making my own granola at home.
One of my favorite go-to breakfasts is a simple yogurt bowl topped with frozen blueberries and a generous handful of crunchy granola. When I started making my own granola, I realized just how easy it is—and how much better it tastes compared to anything from the store.
Why I Love This Homemade Protein Granola
When you make granola at home, you’re in complete control. You get to choose the quality of your ingredients, adjust the sweetness to your liking, and skip any unnecessary additives or preservatives. Plus, it’s far more affordable in the long run, especially if you enjoy granola regularly. Whether you’re sprinkling it over yogurt, enjoying it with milk, or grabbing a handful as a snack, this granola is a simple way to elevate your everyday meals.
This homemade protein granola is made with hearty oats, crunchy nuts, shredded coconut, and a touch of cinnamon for warmth. What makes it a little different from traditional recipes is the addition of egg whites. They might sound unusual at first, but they play an important role—they help bind everything together and create those irresistible crunchy clusters, while also adding a boost of protein.
Now, let’s be clear—this isn’t going to be a super high-protein, bodybuilder-style granola. But it does contribute to your daily protein intake in a natural way, without relying on powders or processed ingredients. And perhaps even more importantly, you’ll know exactly what’s going into your food, which is something I always prioritize in my kitchen.

Ingredients
Egg whites: The egg whites in this granola recipe are responsible for a large portion of the protein content AND they make they give this granola a nice, crunchy texture.
Old-fashioned oats: I love using old-fashioned oats in this granola recipe. They’re classic and provide great texture, but you could also use rolled oats.
Nuts: You can use any type of nuts that you like. I buy a big bag of mixed nuts from Costco that have macadamia nuts, almonds, pecans, Brazil nuts and a few more. They’re salty and I love the combination, but use what you love.
Maple syrup: Pure maple syrup is perfect for giving this granola a little sweetness. You can swap it with honey, agave or skip it all together.
Coconut oil: Melted coconut oil provides a hint of coconut flavor and gives the granola a nice crunch.
Shredded coconut: I love adding unsweetened shredded coconut, mostly for the flavor and texture, but if you’re not a fan, skip it. Instead you could add your favorite dried fruit like dried cranberries or dried cherries. It’s really up to you!
Cinnamon: Cinnamon really just ties this homemade granola together.
Salt: We add a little salt in this granola to help enhance flavors, but not too much if you’re using salted nuts.

How to Make Homemade Protein Granola
TOOLS YOU MAY NEED
- Stand mixer or mixing bowl and whisk
- Cutting board and knife
- Measuring cups
- Parchment paper
- Baking sheet
INGREDIENTS
- 3 egg whites (room temperature)
- 2 cups old-fashioned oats
- 1 1/2 cups chopped nuts (your favorite)
- 1/2 cup maple syrup
- 1/4 c melted coconut oil
- 1/2 cup unsweetened shredded coconut
- 1 tbs cinnamon
- 1/4 tsp salt
DIRECTIONS
Use a sharp knife to chop the nuts into small pieces and set them aside.

Melt the coconut oil either in the microwave or on the stovetop and allow it to cool while you prepare the rest of the granola.

Crack and separate the eggs. Place the egg whites into the bowl of a stand mixer (or a mixing bowl) and beat the egg whites on high for 1 minute until they’re nice and frothy.

Mix the maple syrup and coconut oil into the egg whites.

Add the old-fashioned oats, nuts, shredded coconut, cinnamon and salt and mix until everything is fully coated in the wet ingredients.

Place the homemade granola on a lined baking sheet in an even layer and bake for 40 minutes at 325°F, making sure to stir a few times, especially halfway through.

Once the granola is nice and golden brown, remove it from the oven and allow it to fully cool before storing in an airtight container.

NOTES
- Don’t skip the egg whites. They’re what give this granola its unique texture and subtle protein boost.
- Watch the granola closely while it’s baking as it can go from perfectly golden to burnt pretty quickly.
- Customize the granola by adding different nuts, seeds and/or mix in dried fruit after baking.
- Store the homemade granola in an airtight container at room temperature for up to 2 weeks.
