This simple homemade cinnamon apple syrup adds a little sweetness to your coffee, tea or even baked goodies like pancakes!

On a recent trip back to Wisconsin, we went to a little farmer’s market and I found a few bottles of apple syrup. I thought it was a bit unusual until I started thinking about it, then I realized the apple syrup sounded so amazing, especially to use in homemade lattes and on pancakes, waffles, french toast and so much more. The list really is endless. If you’ve never made your own homemade syrups, they’re surprisingly easy to make and are so tasty! They’re a great way to save money on expensive drinks from the coffee shop and a way to switch up your breakfast favorites.
This homemade cinnamon apple syrup combines rich homemade brown sugar with notes of cinnamon, nutmeg and all spice, along with sweetness, or tartness, of your favorite apples. It smells like a simmer pot while your making it and will fill your kitchen with the scents of fall. If you’re looking for a taste of autumn, this recipe is where it’s at!

How much apple syrup does this recipe make?
This recipe yields about 1 cup or 8 oz of syrup that can be used for fall coffee drinks, over pancakes, ice cream and so much more!
How long does this cinnamon apple syrup last?
Store this homemade syrup in an airtight container, like a mason jar and lid, for up to two weeks, or even more, in the refrigerator. You can use it warm or cold. If you want to warm it up for drizzling on goodies, I recommend heating it on low in a small saucepan.
Can I use regular white sugar or a sugar substitute in this syrup recipe?
You can absolutely substitute the brown sugar for white sugar. The consistency should remain the same. However, I do recommend reducing the liquid by 1/4 cup, whether that’s omitting the water or reducing the apple cider. As for sugar substitutes, I haven’t tested this recipe with sugar alternatives, but if you want to give it a go, I recommend using a granulated sweetener like golden monk fruit or other similar sweeteners. Just note that make substitutions will yield a slightly different result than the original recipe.

Ingredients
Brown sugar: You can use any type of brown sugar, light or dark. I prefer to make my own homemade brown sugar because it tends to have more flavor, but any type works!
Apple cider: Apple cider is wonderful in this syrup, but of course it’s seasonal, so apple juice works great in this recipe too!
Cinnamon sticks: Cinnamon sticks help infuse this apple pie syrup with an amazing flavor, but of course using cinnamon sticks can be pricey, so you can substitute a tablespoon of cinnamon. I suggest straining this syrup through a coffee filter or even a fine mesh strainer to remove any of the grit from the cinnamon if you go that route.
Apple pie spice: Apple spice is a combination of cinnamon, nutmeg and all spice. This addition definitely makes this syrup taste like autumn, but if you don’t have it, you can substitute the individual ingredients or omit it completely or use cinnamon instead.
Sliced apple: You can use any variety of apple you like. I like to slice the apples, but you can chop them up too; whatever you want!
How to Make Cinnamon Apple Syrup
TOOLS YOU MAY NEED
- Medium saucepan
- Measuring cups and spoons
- Whisk and mixing spoon
INGREDIENTS
- 1 cup brown sugar
- 1 cup apple cider or apple juice
- 1/4 cup water
- 1-2 cinnamon sticks *
- 1 tbs apple pie spice *
- 1 apple chopped
DIRECTIONS
Cut one apple into thin slices and set it aside.

To a medium saucepan, add brown sugar, apple cider, water and mix together.


Then add the cinnamon sticks, apple pie spice and chopped apples.

Over medium heat, allow the mixture to come to a simmer, stirring occasionally.

Turn the heat down to low and allow the cinnamon apple syrup to reduce by at least a third, or until it coats the back of the spoon, about 15 minutes.

Strain the syrup through a fine mesh strainer or cheese cloth to remove the bits of apple, cinnamon sticks and spice.


Use the syrup immediately or allow it to fully cool before transferring it to an airtight container.

NOTES
- While the syrup is hot, it will be on the thinner side, but it will thicken as it cools.
- You can substitute ground cinnamon or pumpkin pie spice for the apple pie spice in this recipe.
- Shake the apple cider or apple juice before adding it to the saucepan.

How to Use Homemade Cinnamon Apple Syrup
- Coffee: Add 1-2 tablespoons (or more) to your morning coffee or latte, then add in your milk of choice and enjoy.
- Pancakes or waffles: Drizzle this apple syrup all over your warm pancakes or waffles in place of traditional maple syrup for a delicious and unique taste.
- Over ice cream: Add some of this apple syrup, along with stewed apples and some pecans for a delicious ice cream treat fit for fall.
