TOOLS YOU MAY NEED
- Medium sized sauce pan
- Measuring cups and spoons
- Whisk
- Fine mesh strainer
- Piping bag and tip (optional)
INGREDIENTS

- 2 1/4 cups blueberries
- 1 cup granulated sweetener
- 1 cup filtered water
- A tsp lemon juice (fresh or bottled)
blueberry italian cream soda (per glass)
- 3-4 cubes of Ice
- 1 cup club soda
- 1/4 cup of homemade sugar free blueberry syrup
- 3 tbs half & half
- 1/4 cup whipped cream
HOW TO MAKE SUGAR FREE BLUEBERRY ITALIAN CREAM SODA

In a medium sized sauce pan, combine water, granulated sweetener and lemon juice and stir until combined. Then then add fresh or frozen blueberries and stir. Bring the mixture to a simmer on low-medium heat, stirring occasionally (about 15 minutes).
Using the back of a wooden spoon or a potato masher, mash the blueberries to release as much juice as possible. Then turn the heat to medium and allow it to simmer for another 8-10 minutes.
Remove the syrup from the heat, then allow to cool and strain using a fine mesh strainer.
Cool the sugar free blueberry syrup in the refrigerator for 1-2 hours before using.
SUGAR FREE BLUEBERRY ITALIAN CREAM SODA
Add 3-4 cubes of ice to your favorite tall glass.
Fill the glass half up with club soda.
Add the homemade sugar free blueberry syrup to the glass.
Slowly pour in the half & half.
Top with whipped cream (optional).
NOTES
- Although this cream soda recipe is blueberry flavored, you can use this same recipe and add whatever flavoring you desire!
- Try adding all the ingredients to a blender and blend them to create a frosty drink.
- You can use coconut cream in place of the half & half and omit the whipped cream to make this drink dairy free.
- Be sure to use club soda or soda water and not tonic water, because it will be too salty and effect the taste of this drink.
