No-Bake Ritz Cracker Cookies are an easy-to-make 3 ingredient treat that is great for Valentine’s Day or any holiday! They are crunchy in texture, with a perfect mix of sweet and salty in every bite!

Valentine’s Day, whether you love it or hate it, has the cutest treats, hands down! Chocolate covered strawberries, cute cupcakes with pink frosting and sprinkles, Oreo balls and those little “conversation hearts” candies, forget about it! These no-bake Ritz cracker cookies fit in perfectly! They are easy to make, so cute and are great to make with your kids! They combine sweet almond bark with salty Ritz crackers and creamy peanut butter! I know you and your family will love these little Valentine’s Day treats!

TOOLS YOU MAY NEED
- Measuring cup
- Butter knife
- Baking sheet
- Small microwave-safe bowl
- Fork and spoon
- Tin foil or parchment paper
INGREDIENTS
- 1/2 cup creamy peanut butter
- 30 Ritz crackers 1 sleeve
- 10-12 oz almond bark melting wafers
- Sprinkles of choice
HOW TO MAKE NO-BAKE RITZ CRACKER COOKIES
Spread approximately 1 tsp of your favorite creamy peanut butter on the flat side of one Ritz cracker in an even, but thick layer.
Add a second Ritz cracker and create a “sandwich” or a cookie. Press the crackers between your fingers until the peanut butter is evenly distributed, and wipe away the excess with your finger.
Place the Ritz cracker cookies on a baking sheet and put into the freezer for 10-15 minutes.
In a small microwave-safe bowl, melt your almond bark (or chocolate melting wafers) in 30 second intervals until completely melted (1-2 minutes).
Remove the Ritz cracker cookies from the freezer and begin dipping them. To do this, place the cookie into the almond bark. Then, using a spoon, scoop the almond bark over top until the cookie is completely coated.
With a fork, lift the cookie up and gently wiggle it for 10 to 15 seconds to remove the excess almond bark. Scrape the fork on the side of the bowl and place the Ritz cracker cookie on tin foil or parchment paper. Once you’ve done this with 3 to 4 cookies, decorate them with your favorite sprinkles. Continue this process, making the cookies in batches, until all 15 are complete.
Allow the cookies to set for 10 minutes before eating!
NOTES
- Use your favorite creamy peanut butter, but be sure to use one that is shelf-stable and doesn’t require refrigeration.
- Use almond bark or melting wafers, not actual chocolate.
- Freeze the cookies before dipping them so the peanut butter doesn’t melt into the almond bark.
- Use a fork to remove the Ritz cracker cookies from the almond bark to remove excess.
- Dip 3-4 cookies, decorate them and repeat so the almond bark doesn’t have a chance to set before you add your sprinkles.
HOW TO STORE NO-BAKE RITZ CRACKER COOKIES
These no-bake Ritz cracker cookies are a wonderful treat and even better, they store really well on the counter! No need to refrigerate or freeze. All you need to do is store them in an airtight container on the counter for up to a week.
