You never knew you needed toasted marshmallow coffee syrup in your life … until now! This coffee syrup is smoky, warm and so inviting. You can reminisce about the summer days of the past roasting marshmallows over an open campfire while enjoying a delicious cup of coffee. This recipe is really easy to make and is great not only in coffee, but hot chocolate and so much more.

TOOLS YOU MAY NEED
- Saucepan
- Whisk
- Measuring cups and spoons
- Fine mesh strainer
- Kitchen torch (optional) or sheet pan
- Container with lid for storage
INGREDIENTS YOU’LL NEED
- 1 cup sugar
- 1 cup water
- 10 large marshmallows
- 1 tsp vanilla
- Pinch salt
HOW TO MAKE TOASTED MARSHMALLOW SYRUP
Add water and sugar to a sauce pan and heat over low-medium until the sugar is dissolved.
While the sugar mixture is simmering, toast the marshmallows with a kitchen torch (like I did) or the flame of a gas stove. See notes for another alternative.
Add the toasted marshmallows to the simple syrup and stir to dissolve.
Allow the toasted marshmallow syrup to cool for 1-2 hours, then strain the mixture through a fine mesh strainer.
Stir in salt and vanilla, then add the syrup to an airtight container and store in the refrigerator for up to a month.
NOTES
- An alternative way to toast marshmallows is to place them on a lined cookie sheet and place in a preheated oven and broil at 375°F for 2 minutes.
- If you’re using mini marshmallows, you’ll need about 1 1/2 cups.
- If you toast them with a torch or the burner of your stove and achieve a little black, your syrup will have a darker hue like is shown in this post.
- Try pairing this marshmallow syrup with some chocolate sauce to make a s’mores style drink.
- Add this syrup to hot chocolate would also be divine.
HOW TO MAKE A TOASTED MARSHMALLOW COFFEE DRINK
Line your favorite mug with chocolate sauce.
Add brewed coffee to the mug.
Pour 1-2 tablespoons of toasted marshmallow syrup to the coffee and mix.
Add 1-2 tablespoons of toasted marshmallow syrup to 1/4 cup of heavy whipping cream and shake in a sealed container (or use a frother) until it’s nice and thick. Then pour that cold foam onto the drink.
Enjoy your toasted marshmallow coffee drink by adding a few extra marshmallows or by itself!

- Place the marshmallows on a lined cookie sheet and broil in the oven for a few minutes at 375 and broil for 2 minutes or use the burner on your gas stove and a skewer, or a kitchen torch to toast the marshmallows.

- Strain the mixture through a fine mesh strainer then allow it to cool to room temperature, then add vanilla and salt.
- Mix and add to an airtight container and store in the refrigerator.
