These healthy dairy free spiced walnut pancakes are packed with flavor and amazing texture. Made with a combination of oat flour and warm spices like cinnamon and all spice, mixed with creamy oat milk, these dairy free pancakes are sure to be your new favorite!
For breakfast, one of our favorite things to eat are pancakes. They’re easy and quick to make, and everyone always loves them! I like to get creative with my pancake recipes and thought the combination of cinnamon, all spice and walnuts would taste great together (and I was right)! Although these flavors are typically associated with fall, I think they taste amazing any time of year, especially lately when the weather has been rainy and cold.

HOW TO STORE PANCAKES
The easiest way to store these dairy free pancakes is to let them cool completely and then put them in an airtight container in the refrigerator. They are best if they’re eaten within a week. When you’re ready to eat them, pop them in the microwave or toaster and your’e ready to go!
You can also freeze these pancakes. To do so, lay them in a single layer on a greased baking sheet and freeze for an hour. Once frozen, remove and store in a gallon freezer bag or airtight container for up to four months in the freezer. Simple remove and place in the microwave or toaster and enjoy! This is a great option for when you’re on the go and need something quick.
The batter is good for up to a week in an airtight container in the refrigerator, but is probably best eaten within three days.
INGREDIENTS
- 2/3 cup oat flour
- 1/3 cup all purpose unbleached flour
- 1-2 tbsp ground flax seeds
- 1 tsp cinnamon
- 1/2 tsp all spice can sub pumpkin spice or more cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup oat milk or milk of choice
- 1 tbs maple syrup or sweetener of choice
- 1 tbs melted & cooled coconut oil more for greasing skillet
- 1 egg
- 1 tsp vanilla extract
TOOLS YOU MAY NEED
- Food processor or blender
- Medium mixing bowl
- Knife and cutting board
- Measuring cups and spoons
- Mixing spoon or whisk
- Griddle or skillet
NOTES
- Chop walnuts and store in freezer so they’re ready whenever you need them and they keep longer.
- To make it even easier, buy chopped walnuts to use for these dairy free pancakes!
- If you want to make these dairy pancakes gluten free as well, simply use all oat flour and omit the all purpose flour.
- If you’re making these with all oat flour and are someone who is gluten free, be sure to use oats that are certified gluten free!
- Sprinkle the walnuts on top once you’ve poured your batter onto the skillet instead of mixing them in.
HOW TO MAKE HEALTHY SPICED WALNUT PANCAKES
In a food processor or blender, add about 1 cup of old fashion rolled oats and blend until you have a flour-like consistency. If the oats aren’t completely ground into a flour, that’s okay! That will give these pancakes a great texture!
In a medium bowl, combine oat flour, all purpose unbleached flour, ground flax seeds, cinnamon, all spice, baking powder, baking soda and salt. Then add oat milk, maple syrup (or sweetener of your choice), oil, egg and vanilla extract and whisk until combined.
Preheat a skillet or griddle. Once the skillet is hot, add coconut oil to grease. Using a 1/4 cup measuring cup, pour the batter onto the skillet, then top with the chopped walnuts. Let the pancakes cook for 1-2 minutes on the first side until golden brown and then flip. Cook another 1-2 until it’s done. Serve with delicious maple syrup!
