Fudgy, chocolatey brownies. Need I say more? Brownies are always a good idea in my book. They are the perfect chocolatey dessert that are great on their own, spruced up with frosting or other flavors and amazing on vanilla ice cream! With that deliciousness often comes lots of sugar and fat though. So I decided to try my hand at making some gluten- free brownies that are naturally sweetened and refined sugar free! These brownies are made with homemade oat flour, sweetened with honey or maple syrup and have loads of rich dark chocolate. Feel better about dessert and give these brownies a try, you won’t regret it!

WHAT MAKES THESE GLUTEN-FREE?
Oats are naturally gluten-free, which is really great for those who need to follow a gluten-free diet. However, some oats may come into contact with wheat or gluten, which means it’s really important to find oats that are certified gluten-free. These Bob’s Red Mill Gluten Free Oats are a wonderful option. For those who don’t need to be as strict with a gluten-free diet, you can use any oats you wish!
WHAT MAKES THESE REFINED SUGAR FREE?
This recipe is naturally sweetened with honey or maple syrup, as well as dark chocolate. However, not all chocolate, even dark chocolate, is refined sugar free. If your goal is to cut out all refined sugars, I suggest using sugar free chocolate chips in this recipe. These Lily’s Dark Chocolate Baking Chips are a great option. If you’re not as concerned about refined sugars, feel free to use your favorite chocolate chips, even milk chocolate would taste great with these brownies!
TOOLS YOU MAY NEED
- Food processor or blender
- Microwave safe bowls
- Measuring cups and spoons
- Stand mixer or large mixing bowl and mixing spoon
- 8 x 8 baking dish
- Icing spatula or butter knife
INGREDIENTS
- 1ย cupย dark chocolate chipsย or 1/2 cup melted dark chocolate
- 1/4ย cupย melted coconut oil
- 1/2 cupย honey or maple syrup
- 3ย eggsย at room temperature
- 2ย tbsย brewed coffeeย optional
- 2ย tspย vanilla
- 1 ยฝย cupsย oat flour
- 1/4ย cupย unsweetened cocoa powder
- 1/2ย tspย baking powder
- 1/2ย tspย salt
- Dark chocolate chipsย for topping (about 1/2 cup)
HOW TO MAKE GLUTEN-FREE OAT FLOUR BROWNIES
Using a food processor or blender, blend oats until they are the consistency of wheat flour, or as close to it as you can get. For reference, 1 cup of rolled oats yields roughly 3/4 cup oat flour.
Melt the dark chocolate chips in the microwave in 30 second increments until it is melted (usually takes about a minute and a half or so). Then melt the coconut oil in a separate container. Allow both the chocolate and coconut oil to cool for 5 minutes or so.
In a large bowl or the bowl of a stand mixer, combine the cooled melted dark chocolate, melted coconut oil, honey or maple syrup, room temperature eggs, cooled coffee and vanilla.
Add oat flour, unsweetened cocoa powder, baking powder and salt and mix the batter until it just comes together.
Pour the batter into a prepared 8 x 8 baking pan (I greased with coconut oil) and bake at 350 degrees for 24-26 minutes or until a toothpick comes out clean.
As soon as the brownies come out of the oven, sprinkle the remaining dark chocolate chips on top, allow them to melt and spread to create a frosting.
There you have it, fudgy and delicious gluten free brownies that are made with honey and not refined sugar!
NOTES
- If you choose to use coffee in this recipe, brew it well ahead of time so it has time to cool. You could even use coffee leftover from the morning.
- Quick cooking oats are easier to grind into flour, but I’ve used rolled oats and steel cut oats in this recipe and they still work wonderfully.
- You can use any type of your favorite chocolate chips in this recipe including sugar free, dairy free, et cetera.
- These brownies are even better the next day!

Oh I am so excited for these! I donโt eat a gluten free diet but a friend of mine does and we like the gluten free brownies sold at the store. However, they are expensive and I always prefer to make my own food than buy something prepackaged. Thanks for sharing this recipe!

So its 5:28am in Texas and Im scrolling through these browning and looking at the ingredients. And Im like all these great big pictures and the brownies just keep popping up as I am looking at the instructions. So now Im like I have to have breakfast before making brownies because brownies for breakfast are frowned upon. I love the addition of the coffee and the oats.

These brownies taste very good and I appreciate the healthier ingredients, but they came out very cakey and dry for me, rather than fudgy. I used more than 1/4 cup of cocoa powder and baked them for the amount of time recommended. Is there anything else I might have done wrong? Maybe I mixed them too much.

Hi Rachel, thank you for the feedback, I really appreciate it! I’m sorry they came out dry. I would recommend adding the 1/4 cup cocoa powder instead. You can also decrease the oat flour slightly (1 1/4 cups instead), although I haven’t tested that one out myself. I find that these brownies seem to be more moist once they’ve fully cooled. I hope that helps!
