As a kid, I was super picky and one of the foods I really never liked was onions. Of course my mom would sneak them in here and there in things like spaghetti, but other than that, they were definitely not my favorite. Now that I’m older, I’m starting to really love onions and I can’t help but think about how my parents always said your tastebuds change as you get older. I’m finding that to be the case, and of course there’s science to back that up, but still, I find it funny.
If you have children, you may find yourself in a similar boat where they don’t like to eat certain foods, including onions, but I find that this meal is a favorite in my house, which contains a couple picky children. There’s something about the crunchy French fried onions that takes it to the next level. Let’s get into making this easy French onion chicken casserole!

Serve as is OR pour into 9 x 13 casserole dish or 12 inch cast iron skillet, top with French fried onions and bake at 375°F for 15-20 minutes.
NOTES
- To make this meal come together even easier, prep your chicken ahead of time! I like to make a large batch of chicken at the beginning of the week to use in meals throughout the week. You could also use rotisserie chicken as well!
- If you are cooking the chicken while making this dish, add frozen or thawed chicken breasts (about 2-3) to a sauce pot with water and boil for about 20 minutes or until fully cooked. Remove and cube or shred before placing into the dish.
- If you don’t have chicken bone broth, no worries! Replace it with extra sour cream or plain greek yogurt.
- This meal would taste great with turkey or even ground hamburger as well.
- If you prep this French onion chicken casserole ahead of time, it may help to add a splash of cream and some extra cheese on it before baking/reheating so keep it creamy and not dry.
This dish is super customizable and you can add and eliminate certain ingredients to fit your needs. So if someone doesn’t like crunchy onions, no problem. You can add in broccoli, substitute homemade cream of anything soup, use greek yogurt instead of sour cream, switch to healthier or gluten free noodles. Really, you can make it to best fit your needs! That’s the beauty of cooking from scratch and making homemade meals!
