Any time I have the opportunity to make a delicious dessert like this brookie, I take it. Not only do I love baking, but I also love dessert. This recipe is so great because it’s made in a cast iron skillet, one of my favorite kitchen tools! If you’re looking for a wonderfully decadent dessert to enjoy with your whole family for a special occasion, this is it! This recipe can easily be doubled or cut in half depending on how many people you’ll be serving, but this the perfect amount for 4-6 people.
So what exactly is a brookie? Brookies are a delicious combination of a brownie and a chocolate chip cookie, typically in the form of bar. This cast iron skillet brookie is more like a giant cookie that can be cut up like a pie. It can be served as-is, decorated with delicious buttercream frosting, topped with sweet vanilla ice cream or drizzled with rich chocolate sauce. Regardless of how you choose to enjoy this dessert, it’s sure to be a crowd pleaser!

HOW TO MAKE A CAST IRON SKILLET BROOKIE
TOOLS YOU MAY NEED
- Large mixing bowl
- Electric mixer or stand mixer
- Measuring cups and spoons
- Spatula
- 10″ cast iron skillet
INGREDIENTS

- 1 stick room temperature butter (1/2 cup)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1/2 cup all purpose flour
- 1/2 cup cocoa powder
- Pinch salt
chocolate chip cookies
- 1 stick room temperature butter (1/2 cup)
- 2/3 cup light brown sugar
- 1/3 cup granulated sugar
- Egg
- 1 tsp vanilla extract
- 1 2/3 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup semi-sweet chocolate chips (or more)
DIRECTIONS FOR MAKING A CAST IRON SKILLET BROOKIE
How to make the brownies
In a large mixing bowl, cream together butter, granulated sugar and brown sugar. Then mix in the eggs and vanilla.
Slowly mix in all purpose flour, cocoa powder and salt.
Pour the batter into a lightly greased 10″ cast iron skillet and set aside.

Cream together softened butter, brown sugar and granulated sugar. Add your egg and vanilla and and beat for another 30 seconds.
In a separate bowl, mix together the flour, salt and baking soda, then add half to the bowl and mix until the flour is just incorporated. Then add the remaining flour and mix again until just incorporated. Lastly, mix in the chocolate chips.
Scoop 1/3 cup of the cookie dough, roll it into a ball, then flatten it and add it to the outer edge of the cast iron skillet on top of the brownie mixture. Repeat until you run out of the cookie dough.
Bake the cast iron skillet brookie at 350ยฐF for 25 minutes, then cover with tin foil and bake another 15-20 minutes or until a toothpick comes out clean.
NOTES
- Lightly grease the cast iron skillet ahead of time with a bit of coconut oil or avocado oil to ensure an easy release of the brookie.
- You can use store-bought cookie dough and brownie mix if desired, but this recipe will give the best results.
- If you don’t have a cast iron skillet, this can be made in an 8 x 8 casserole dish, but the bake time may vary slightly.
- Be sure to cover the brookie after 25 minutes to ensure the chocolate chip cookie layer does not burn and to ensure both layers are cooked all the way through. Don’t skip this step!
- Store the leftovers on the counter for up to three days in an airtight container or in the freezer for up to three months.
