This cheesy hash brown casserole with corn flakes is easy to make and the perfect side dish to include to a holiday dinner.
Holidays are such a special time to me. It’s a time where my families on both mine and my husband’s side get together and share a delicious meal cooked from scratch. It’s my favorite time of year. These meals create memories and nostalgia. There’s just something extra special about the food you eat during the holidays. Growing up, I remember my mom always making this cheesy hash brown casserole with corn flakes. It’s typically a side dish, but it pairs so nicely with turkey or ham, and is one of my favorite holiday side dishes. This dish brings me warm feelings of Christmas’ past, so I wanted to share the recipe in hopes that you can incorporate into your holiday meals as well!
Now, this dish isn’t something new or fancy. In fact, many people probably have this at their holiday get togethers. Sometimes this dish is called “funeral potatoes,” but we just call them hash brown potatoes. My mom wrote this recipe down for me years ago and although hers is good, I’ve made just a few adjustments to it to make it my own! Cheesy hash brown potato casserole incorporates only a handful of ingredients including of course hash browns, cream of chicken soup, sour cream and cheese. All this combined with a few spices and topped with crunchy, buttery corn flakes makes this side dish rich and delicious!

- Large mixing bowl
- Medium mixing bowl

- 9 x 13 casserole baking dish
INGREDIENTS
- 1 package thawed hash browns
- 1 can cream of chicken soup
- 12 oz sour cream
- 2 cups grated cheddar cheese
- 2 cups crushed corn flakes
- 8 tbs melted butter (1 stick)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
HOW TO MAKE CHEESY HASH BROWN CASSEROLE WITH CORN FLAKES
In a medium mixing bowl, stir together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt and pepper and set aside.
Next, in a separate small mixing bowl, combine the crushed corn flakes and melted butter and set aside.
In a large mixing bowl, combine the thawed hash browns, soup and sour cream mixture and half the shredded cheese.
Add the hash brown mixture to a greased 9 x 13 casserole dish.
Add the remaining shredded cheddar cheese over top, then the corn flake and butter mixture.
Bake the cheesy hash brown casserole in a pre-heated oven at 350°F for 45 minutes or until full cooked and the corn flake topping is crunchy.
NOTES
- You can crush the corn flakes by hand, they don’t have to be ground.
- If you don’t have a large enough mixing bowl, add half the hash browns to the greased casserole dish, then half the cream of chicken mixture and repeat, then top with remaining cheese and corn flakes.
- To make this dish more of a meal, add in cubed ham, ground hamburger or bacon.
HOW TO STORE HASH BROWN CASSEROLE
- This is a great make ahead meal. Simply put together the casserole, place it covered into the refrigerator, then bake when you’re ready.
- Alternatively, you could put together the casserole, cover then freeze.
- Once the casserole is baked, keep leftovers in the refrigerator for up to a week.
