When I think of fall, one of the first things that comes to mind is apples. Crisp, ripe apples. One item on my fall bucket list every year is to visit our local apple orchard and get a delicious caramel apple! Living in the Midwest means fall consists of snuggling into a cozy blanket on cool mornings, breathing in the fresh crisp air, seeing beautiful orange, yellow and red leaves on the trees and eating hearty food.
Growing up, my grandparents lived on top of a ridge where you could see for miles. There were beautiful rolling hills in the distance that were covered in apple trees. Imagine that sight in the fall! Simply gorgeous. Out their backdoor was a large apple orchard, which meant they had access to apples whenever they wanted! My grandma used to make a bread similar to this spiced apple pecan bread that we would have every year. We just called it apple bread and it was thick, dense, sweet and delicious. Every time I make it or I make it, it reminds me of the autumns of my childhood.
Although I still love that recipe, I decided to adapt it a bit to better fit my liking (and hopefully yours too). This spiced apple pecan bread has a soft, moist, almost coffee cake type of texture. When you combine that with soft warm apples, brown sugary crunchy pecans and spices like allspice and cinnamon, you really can’t beat it. The smell is simply amazing and will make your home smell like absolutely divine. Even better, the taste is incredible and will go great with any warm beverage like your morning coffee or hot apple cider!

WHAT TYPE OF APPLE SHOULD I USE FOR BAKING?
When you bake with apples, it’s important to choose the right type of apple. A lot of times, you’ll see recipes call for baking apples, but what does that mean? A baking apple is a type of apple that is firm and hardy. These types of apples will be able to stand the heat when they’re baked and keep their shape. Even though they soften and melt into whatever dish you’re baking, you should still be able to see lovely chunks of apples throughout your dessert.
For this spiced apple pecan bread, I like to use apples like Galas, Honey Crisps and Granny Smiths. Although the flavor profiles of each of these apples differs, they all taste wonderful in sweet apple desserts, breads, pies, crisps and more. Work with whatever apple you can find or ones that you enjoy the most!

HOW DO I STORE SPICED APPLE PECAN BREAD?
This bread will keep at room temperature in an airtight container for about three days, and up to a week in the refrigerator. To freeze this bread, simply wrap the cooled loaf in tightly plastic wrap and then place in a gallon sized baggie and freeze for up to 6 months.
HOW TO MAKE SPICED PECAN APPLE BREAD
TOOLS YOU MAY NEED
- Stand mixer or mixing bowl
- Cutting board and sharp knife
- Vegetable peeler (optional)
- Small mixing bowl and spoon
- 9 x 5 loaf pan
- Parchment paper
INGREDIENTS YOU’LL NEED
Bread
- 1 ยพ cup all purpose flour
- 1/2 cup granulated sugar
- 1 tsp cinnamon
- 1 tsp baking powder
- ยฝ tsp baking soda
- 1/2 tsp allspice (optional)
- ยฝ tsp salt
- 2 cups peeled and diced apples (about 2)
- ยฝ cup vegetable oil
- 2 eggs
- 1/4 cup apple juice
- 1 tsp vanilla extract
Topping
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1 tsp cinnamon
HOW TO MAKE SPICED PECAN APPLE BREAD
Start by peeling and dicing 2 large baking apples. This should equal about two cups or so. Depending on the size of your apples, you may need more or less. Be sure to dice the apples small, but not small enough where they will melt away into the batter. You can also chop your pecans at this time.
In your stand mixer or a large mixing bowl, first combine the dry ingredients: all purpose flour, granulated sugar, cinnamon, baking powder, baking soda, allspice and salt. Next, add in the vegetable oil, eggs, apple juice and vanilla extract and mix until just combined.
Using a spatula or spoon, fold in the diced apples until just combined. Be sure not to over mix!
In a separate bowl, mix together the pecans, brown sugar and cinnamon. Then pour half of the batter into a greased or lined loaf pan, then sprinkle half of the topping mixture all over the batter, being sure to coat it.
Pour the remaining batter on top and then sprinkle the rest of the topping mixture on top. You can add more pecans on top if you’d like as well.
Place your apple bread in a 350ยฐF pre-heated oven and bake for 50 minutes or until the bread is baked thoroughly.
Let your delicious spiced apple pecan bread cool for 10 to 15 (or not), get yourself a nice warm drink and you’re ready for a delicious breakfast or afternoon snack!
NOTES
- Choose baking apples like Galas, Honey Crisps or Granny Smiths that are firm and hardy.
- For extra crunch, incorporate chopped pecans into the batter.
- If you have some apple cider on hand, you can sub that for the apple juice in this recipe.
- After about 40 minutes of baking this bread, take a peak. If the pecans on top are starting to get a little dark, you can place a piece of aluminum foil over top to ensure they don’t burn. Continue cooking for another 10 minutes or until the apple bread is fully baked.

You could eliminate them all together and just use brown sugar and cinnamon. The flavor will still be there, the only thing you’d be missing is the crunch! Hope you like it and thanks for asking ๐

My batter came out super thick/dry such that I couldn’t easily “pour” it into the loaf pan and it was hard to fold in the diced apples. I followed the recipe/measurements to a tee – not sure if it needs a higher ratio of wet ingredients.

Thanks for the comment! The batter is really thick for this quick bread, however I find once it’s baked, the apples release a lot of their juices, which helps create a moist bread. How did it come out once it was baked? You could always add a little more apple juice if you feel like it turned out dry. Would love to hear your feedback!
