Sourdough sweet potato muffins are easy to make, full of flavor and naturally sweetened! Add in chocolate chips, and they’re even better! They’re also a great way to use sourdough discard and enjoy the many benefits that sourdough provides!
If you’ve followed along for a while, you may have noticed I have a few recipes that utilize sweet potatoes, and that’s because I love to use them in baking! They provide great flavor and texture. We really enjoy making sweet potato pancakes and sweet potato bread on the regular. If you love baking with pumpkin puree, I encourage you to try out baking with sweet potatoes because they are equally delicious and provide a very similar flavor! And the great thing is that you can usually find sweet potatoes year round.

TOOLS YOU MAY NEED
- Stand or hand mixer
- Measuring cups and spoons
- Spatula
- Muffin tin and muffin cups
INGREDIENTS
- 1½ cups all purpose unbleached flour
- 1½ tsp cinnamon
- 1 tsp salt
- 1/2 tsp all spice or pumpkin pie spice
- 1 cup sweet potato puree
- 1/2 cup maple syrup or other sweetener of choice
- 1/4 cup coconut oil or applesauce
- 1/4 cup apple juice
- 2 eggs at room temperature
- 1 tsp vanilla extract
- 1/2 cup sourdough starter fed or unfed
- 1 tsp baking soda
- 1/2 cup chocolate chips optional
HOW TO MAKE SOURDOUGH SWEET POTATO MUFFINS
In the bowl of a stand mixer, combine the all purpose unbleached flour, cinnamon, salt and all spice.
Next add in the sweet potato purée, maple syrup, coconut oil, apple juice, eggs and vanilla extract and mix until just combined.
Add in the sourdough starter and mix. Add in the baking soda and mix. Then fold in your chocolate chips (optional).
Fill muffin liners 3/4 way up (use a 1/4 cup measuring cup to fill). Then bake 375°F for 20 minutes or until toothpick comes out clean.
NOTES
- Make your own sweet potato puree or use store bought canned sweet potatoes, then puree.
- Try replacing the chocolate chips in this recipe with walnuts or pecans!
- If you forget to put your eggs out at room temperature, simply place them in the microwave for 15 seconds to warm them up a bit!
- You can use either fed or unfed sourdough starter in this recipe.
