When it comes to holidays and get togethers, I enjoy making bite-sized desserts that are easy to transport and of course, easy to eat. For years, I’ve made Oreo balls for the holidays. They’re a family favorite, easy to make, require little effort and are a crowd favorite. This year, I wanted to create a dessert with a similar concept. One dessert that is popular around Christmas time is the chocolate covered cherry. They are one of my favorites, although I couldn’t tell you the last time I’ve had one. I love the flavors of the sweet cherry with the rich chocolate. There’s something about that combination that is absolutely delightful, in my opinion.
Chocolate covered cherry brownie truffles are made starting with a delicious chocolate brownie that’s been crumbled and mixed with a cherry cream cheese frosting. The brownie mixture is scooped, then flattened. Placed in the center is a delicious maraschino cherry. All of that goodness is rolled up into a bite sized ball, then dipped in delicious chocolate. This dessert is rich in flavor and has a wonderful cake-like texture. It’s similar to biting into a chocolate covered cherry candy and is absolutely delicious! Now, let’s get into how to make these yummy treats!

TOOLS YOU MAY NEED
- Mixing bowls
- Measuring cups and spoons
- 13 x 9 baking pan
- Stand mixer or hand mixer
- Bowl for melting chocolate
- Spoon or fork
- Parchment paper, wax paper or aluminum foil
INGREDIENTS
- 13 x 9 pan of brownies
- 10-12 oz maraschino cherry
- 1/2 to 3/4 cup cherry cream cheese frosting (see recipe below)
- 14-16 oz melting wafers or almond bark
HOW TO MAKE CREAM CHEESE FROSTING
Ingredients for Homemade Cream Cheese Frosting
- 6 oz softened cream cheese
- 4 tablespoons (1/2 stick) softened butter unsalted
- 4 tablespoons maraschino cherry juice
- 1 3/4 cups powdered sugar
- Pinch salt
- Milk, half & half or heavy whipping cream as needed
How to Make Homemade Cream Cheese Frosting
- Add softened cream cheese and butter to the bowl of a stand mixer and beat using the whisk attachment for 1 minute or until mixed and fluffy.
- Add 1/2 of the powdered sugar and salt and mix, then add the rest of the powdered sugar and mix
- Slowly add in the maraschino cherry juice until it reaches the right consistency.
- If needed, add a small amount of milk, half & half or heavy whipping to thin the frosting out.
HOW TO MAKE CHOCOLATE COVERED CHERRY BROWNIE TRUFFLES
Prepare a 13 x 9 pan of brownies. I used a boxed mix to make it a bit easier, but you can use your favorite brownie recipe. Once the brownies are completely cooled, use a spoon and your hands to break the brownies into pieces, as small as you can get them, and add the pieces into a mixing bowl.
Add the cherry cream cheese frosting to the bowl and mix until you reach the desired texture, which allows you to form balls.
Take 1 tbsp of the brownie mixture and flatten it out in the palm of your hand. Add one de-stemmed maraschino cherry to the center and form a ball around it with the brownie mixture.
Place the ball onto a piece of parchment and continue until all the brownie mixture is gone. Then place the balls into the refrigerator for 1 hour to harden.
Before removing the balls from the refrigerator, melt the chocolate wafers in the microwave in 30 second increments until completely melted and smoothed.
Remove them from the refrigerator and re-roll them to get a rounder shape, then place one ball into the chocolate and coat completely, then lift to allow excess chocolate to drain. Place the cherry brownie truffle onto a clean piece of parchment paper or aluminum foil to cool and harden (about 5-10 minutes).
NOTES
- Depending on the consistency of your brownies, you may need more or less cream cheese frosting. Start with about 1/2 cup and work your way up.
- You can certainly use store-bought cream cheese frosting as well, or even chocolate buttercream.
- If you can’t find maraschino cherries, cherry pie filling will work as well, although it may be a bit messy.
- Be sure to chill the brownie balls for at least an hour prior to dipping. This will help them keep their shape better.
- Re-roll the brownie balls before dipping to get a nice, round shape.
- Using chocolate candy melts as opposed to regular chocolate will ensure a nice, hard shell forms around the cherry brownie truffle. If you use regular chocolate, it will melt quickly.
HOW TO STORE CHOCOLATE COVERED CHERRY BROWNIE TRUFFLES
Store these chocolate covered cherry brownie truffles in an airtight container in the refrigerator for up to a week. You can also freeze them for up to three months in an airtight container or freezer bag as well.
