I don’t know about you, but sometimes I get bored with my daily coffee. I make it the same way for a while, then at some point, I need to switch it up! Sometimes even, I like to take it a step farther and make it into a little treat. Since I usually only have one cup of coffee a day (okay, okay, sometimes two), I don’t feel super guilty about adding a few extras to it once in a while. The weekends are usually when I like to do this because I have a little more time to make my coffee extra special.
Some of my favorite ways I like to make my coffee into a treat is to add things like homemade whipped cream, caramel sauce, chocolate sauce, spices, coffee syrup, little cookie pieces, et cetera. You can make all of these elements yourself or find them at the store. Either way, they help elevate an otherwise boring drink, in my opinion. Now, let’s get into how to make one of my favorites, caramel stroopwafel coffee!

WHAT IS A STROOPWAFEL?
A stroopwafel is a Dutch treat that is made from two thin, crispy waffle type cookies that are slathered with a delicious caramel filling and sandwiched together. Traditionally, they are made to eat while enjoying a cup of coffee or tea. While the drink is hot and steamy, you place the stroopwafel on top of your cup to allow the steam to soften it. Once it’s soft, you can snack on it while you sip on your coffee or tea!
I was first introduced to stroopwafels years ago when a co-worker brought them back from his trip to Holland. Fun fact, my great grandfather was from Holland! So it’s no surprise then that I love these cookies, right? If you’ve never had a stroopwafel, I think you’ll love them. This caramel coffee is the perfect way to incorporate them into the drink. I like to either sprinkle cookie pieces on top or dunk a stroopwafel into the coffee. Either way, it’s absolutely delicious!
HOW TO MAKE CARAMEL STROOPWAFEL COFFEE
TOOLS YOU MAY NEED
- Your favorite mug (preferably 12 oz or bigger)
- Stand mixer, electric mixer or whisk (optional if making your own whipped cream)
- Plastic bag or piping bag with tip
- Spoon
INGREDIENTS FOR STROOPWAFEL COFFEE
- 8 oz of your favorite brewed coffee
- 1 tablespoon caramel sauce
- 1/4 cup whipped cream
- 1/2 stroopwafel cookie (broken apart)
HOW TO MAKE THE TOPPINGS
- CARAMEL SAUCE: For the best caramel sauce, I recommend making your own. It is so rich and buttery, and simply amazing. It will make this drink and others even better. Here’s the recipe I used. It will make more than you need for this recipe, but I’m sure you can find lots of uses for it! You could also use store bought caramel topping if you don’t want to make your own.
- HOMEMADE WHIPPED CREAM: You can use Cool Whip, or you can simply make your own like I did by mixing together about 1/3 cup of heavy whipping cream with 1 to 2 teaspoons of powdered sugar and 1/2 teaspoon of vanilla. Whip that mixture on high in the stand mixer or with a hand mixer for about 1 minute or so until nice, stiff peaks form. Either place the whipped cream in a plastic baggie or a piping bag with a tip to easily add a nice swirl on top!
- STROOPWAFEL CRUMBLE: Take one stroopwafel and place in a small plastic baggie, seal the baggie and hit against a counter to break up the pieces.
DIRECTIONS FOR MAKING CARAMEL STROOPWAFEL COFFEE
First, line your coffee mug with caramel sauce.
Into that same mug, pour in a cup of favorite hot coffee.
Top with your homemade whipped topping, drizzle some caramel sauce and then sprinkle some crumbled stroopwafel pieces on top!
NOTES
- I chose a medium roast coffee, but you can use whatever you like! A caramel or toffee flavored coffee would work well in this drink too!
- I like to make all the toppings ahead of time so that I can make this drink whenever I want.
- Turn this recipe into a blended coffee drink by adding cooled coffee or cold brew into a blender, along with ice, some caramel sauce and some heavy whipping cream. Blend, then top with whipped cream, caramel and stroopwafel pieces!
